Recently at University Catering on the University of Oregon campus in Eugene, the crew has been forced on short notice to prepare for the Oregon Ducks football team a daily late-night buffet spread for their team meetings. With all the items being cold, the kitchen crew is not required to stick around to fire any hot items, though students must be scheduled to deliver the cold smorgasbord to the opposite side of campus every night for a 9:30 pm start. So the question remains to be asked -- What do Ducks eat?
From the guy who prepares their bedtime snack most every day this month, here's the formidable list:
TABLE ONE: ANTI-INFLAMMATION TABLE
- One pound of trail mix (nuts/dried fruit)
- One large platter of strawberries (eight pounds)
- One pound of dried blueberries
- One pound of raisins
- One pound of dried cranberries
- One pound of almonds
- One pound of walnuts
- One pound of husked sunflower seeds
- One case of bananas
- Thirty apples
- Thirty oranges
- Thirty nectarines
- Organic all-natural peanut butter
TABLE TWO: ENERGY TABLE
- Fifty individual containers of non-fat milk
- Fifty individual containers of low-fat milk
- Fifty individual containers of low-fat chocolate milk
- Fifty individual containers of chocolate soy milk
- Five gallons orange juice
- Five gallons cranberry juice
- Five gallons grapefruit juice
- Eight loaves of white bread
- Four loaves of 100% whole-wheat bread
- Bowl of grape jelly
- Bowl of raspberry or blackberry preserves
- Bowl of strawberry jam
- Large bowl of dill pickle spears
- Peanut butter
- Bowls of sunflower seeds in shell (regular, ranch and barbecue)
- Cereal (Honey Nut Cheerios, Raisin Bran, Kashi Go Lean Crunch, Low-fat Granola)
- Two quarts sugar-free jello
TABLE THREE: MUSCLE RECOVERY TABLE
- Two nine-pound deli cold cuts and cheeses platters
- Two large platters with lettuce, tomatoes and onions
- One hundred assorted rolls
- Mayonnaise
- Mustard
- Sixty hard-boiled eggs, peeled
- Twenty individual grilled-chicken salads
- One quart of plain yogurt
- One quart of strawberry yogurt
- Two quarts cottage cheese
So that's what Ducks eat, folks... and just think, this is just their bedtime snack! Just imagine the lunches and breakfasts and dinners I (thankfully!) don't have to cook...
