I've got World War 3 by WCW, as my first pick.
60 Man battle royal!
Doubled the Royal Rumble. The most the WWE's ever had in a Royal Rumble is 40.
3 rings, 60 wrestlers at once! No need for 2 minute breaks, and entrances.
Got right to it. (redneck voice) World War 3 was the perfect title for that pay per view. Tho it was short lived, it def. was one of the brightest ideas Eric Bishoff had.
Seen the VHS tapes on Ebay, going for upward of 60 bucks.

In 1987 the landscape of rastlin', wrestling and sports entertainment changed forever when ECW presented it's first ever PPV....
And it has never been the same since, thank gawd!
While most fans only think of Hardcore wrestling when the think of ECW. ECW was so much more than that. Yes, it did have chair shots and barbed wire matches but it also had luchadores such as Ray Mysterio and Physcosis, and technical wrestlers such as Chris Jericho and Chris Benoit. It also had high flyers such as RVD and Sabo, arse kickers like Sandman, master manipulators like Raven, and franchises such as Shane Douglas. There were great tag teams too. The likes of the Dudley Boys, Pit Bulls and Public Enemy graced ECW's rings.
There were great angles/storylines. Like the grudge matches between Tazz and Sabo (Sabo broke Tazz's neck) and PIt Bull #2 vs Shane Douglas (who broke Pit Bull #1's neck).
Terry Funk, Sandman, and Stevie Richards faced off in a 3 way dance with the winner (Funk) facing Raven in the Main Event for the HW title. Funk beat Raven.
If Funk's involved, ya just know this was good!

I saw MattUSA below, posted that Starrcade was WCW's version of WrestleMania, not true, Superbrawl was.

I disagree PCH! Starrcade was NWA/WCW's WrestleMania.
It was in the words of Ric Flair "The Granddaddy of 'em all"!
Without Starrcade there probably wouldn't have been a WM. Starrcade made it to PPV before WM did. WM was Vince's answer to Starrcade. Even Vince has admitted that.
Starrcade started in Novemeber 1983. That's 3 years before WM1 for those scoring at home. I noticed that you only listed 11 SB main events in your argument. Starrcade has almost double the history of SB without counting the WWE Starrcades.
You want a big main event. The first main event in 1983 at Starrcade which was held in North Carolina was Ric Flair vs his bitter rival Harley Race in a steel cage. Race was the reigning NWA World HW Champ. Flair won a bloody battle to regain the NWA World HW title from Race.
Starrcade was always billed as the biggest event/PPV in NWA/WCW. In the early to mid 80's when that was the only major event/PPV for the NWA it was built to all year. Gawd how I miss those year long builds/feuds.
I don't have enough space to list all of the main events or major angles from 18 years of NWA/WCW Starrcades so I'll just end with this:

My last pick, an odd one, WWE's CYBER SUNDAY.
THE FANS, got to pick what stipulation they wanted to see. The FANS, finally got to vote for matches they wanted to be made. The FANS, got a big surprise with Cyber Sunday. In the land of predictability, this pay per view took the cake.
Genuis idea by Vinnie Mac. Too bad it's gone.
